Judy - Mesquite would be a fine choice for a wood species for a wood countertop. The lumber tends to be on the shorter side so longer countertops (10'+) might feature butt-joints throughout in order to achieve the overall length your kitchen/design might require. This is opposite to how we typical build (we use full-length pieces) but a reality when working in mesquite (or other woods that run on the shorter side).

This particular countertop is hickory/pecan that has been stained to look like walnut. Under our permanent finish we can stain to any color.

This is what im wanting to do. My builder worries about water getting on trim and ruining breadboard. Have you had any problems with this?

We're very interested in using this wood for an island. When you say hickory/pecan what do you mean? Our builder does not think this looks like hickory! Thanks for your help with this.

This countertop is hickory with a dark walnut stain. Hickory without a stain would look very different (blonde with brown and black streaks). This particular client was looking for a very dense hardwood, but wanted a darker overall color. We settled on hickory for toughness/durability and uses a dakr walnut stain for the color.
