Congratulations on building your new, small home!
Our family of four just moved into our 1200 sq ft house. We chose to put our laundry in our main bathroom (with a shower); we were able to eek out a second bath with a tub. The shower stall is a Fiber-Fab model 38 and we are very pleased with it and totally recommend. I insisted on a side by side washer and dryer so I can have a shelf above them for three baskets to sort the dirty laundry.
Our's was a total gut renovation that stayed in an existing footprint, but I'll include our drawings here in case it helps you.
We've been here for about 6 weeks and we are very very happy with the floor plan. We are doing our best to be very discerning about what we bring in to the house and so our furnishings and 'things' are very minimalist right now, but everyone who visits comments how spacious it feels.
Our master bedroom is pretty big (we have a king size bed and still have a lot of space left.) If I could allocate some master bedroom footage and the little mudroom footage to the kitchen, I think it could be perfect, but we did the best with dimensions we had.
