Ditching the "U" for a looooong "L" layout turns a "Space for one cook problem" into an " Cooking production line". Opening the face of the work space to the room translates to dual usage possibles for the floor area when no one is at the counter. Flexible to big or small families as well as buyer eating, living and entertaining styles. Throw in a breakfast bar on wheels and you gain even more counter area when you need it. Roll it to one side and you have a buffet or beverage bar plus floor space for stand-up munch and mingle entertaining. Many styles of dining table will expand to the size needed at the moment. Family sized up to dinner party long table. Hate table eating? Sink into a comfy couch and channel surf with your heart out.
Breaking the "U" does not work. This layout is 11 to 12 feet similar to the existing with slightly better cabinet access but equal yet broken up working and clean up counter surfaces.

Transitional Beveled Shaker cabinets like Brad and Mike's married with an impressive and current counter style. This "waterfall" finish to the counter says "High End Home" to a style conscious home buyer. If this were incorporated in the design it could justification extending the end of the peninsula beyond the existing footprint a bit so that it is visible.

High Entry Step / Low driveway / Downspout Ice solution. Raise the driveway grade to reduce the current step up to a maximum of 7 inches. (With flags added this would become 8 inched.) Carve out a drainage channel in the center of the driveway. Filled with gravel interspersed with deep-rooting shrubs or capped loose-lay flagstone or with a tall, narrow, core-ten planter wall concealing a seep reservoir. Redirect all 3 downspout to the drainage feature at the center of the driveway. Irrigate the planting naturally.
